Roselle Juice & Jam
in one time. First, boil roselles in water then keep all
boiled roselles meat for making jam.Time to cook, prepare all Ingredients as in this recipe and follow me.
- Pull roselle petals
(beware bur)
, leave the green seed we use only petals. Soak them a few mins then wash dust in water 2-3 times.

- Measure 3 litres of water pour into a stainless steel pot, add roselles and close the lid boiling until the water becomes red (The taste of Roselle is rather sour, aluminum does interact with acid foods so stainless steel pot is the best choice for your health.) - After the water becomes red color. Strain water with a colander then keep boiled roselles meat and 1 bowl(600 ml.) of roselle juice for making jam. Back to roselle juice, put a pot on the stove again then add 400 g. sugar, lace with 1/2 teaspoon of salt make roselle juice taste delicious (carefully add salt into a pot, add just a few and taste, don't make juice salty) if you don't like too sweet or drink without ice you can add only 300 g. sugar or less up to you, make flavour you like.

Well, i have heard that drink roselle everyday for years, not good for a kidney. So, we actually add some these dried chinese dates

How to make roselle jam, add boiled roselle meat and juice(600ml) together in a blender, turn on for 3 seconds then off do like this 4-5 times but still see tiny pieces.

After that pour it into a stainless pot. Add 450 g. sugar, stir a bit then bring to the boil. Add 1/8 teaspoon salt. The taste of roselle jam should be sweet and little sour, very good with bread or cracker which is a bit salty already...Stir sometimes, boil until syrupy. Turn heat as low as it will go to get the slowest simmer then add some gelatin little bit and stir well, gently add more gelatin till about 1-1/2 table spoon or a little bit more if u like it stay same as jam at the supermarket (how to test if jam you make is thick enough, use small teaspoon spoon out a little bit jam, blow it cool then put in the fridge for 5 minutes. remember that jam will get more trick when it cool so don't put too much gelatin)
