What? There's a lot. I can tell:

Quesadillas (tortillas with cheese)

Guacamole (avocado purée)

Consomé (chicken stock)

Mole poblano (this one is tasty, heavy and difficult, and you need ingredients I fear not available in Thailand)

I know more or less those one.
