I grew up in Kalamazoo, Michigan and lived there until I was in my mid-30's. There was a place called the "Quality Bakery" that was a REAL bakery and made fresh breads, donuts and sweet rolls daily. It was very close to my high school and every morning I would go there at 7:30 for coffee and fresh baked stuff. And I knew the family who owned it quite well. It closed many years ago. Why? I think partly because the public accepted the mass-produced stuff, and the family's only son didn't want to join the business too.

What about Mister Donut and Dunkin' Donuts? Their donuts are prepared in a central kitchen and then shipped out to the various branches. So how fresh do you think they're gonna be? Okay, acceptable I agree (in the States, not in bkk). But it's mass-production, not an art.

Real bakeries don't exist anymore and an art form has been lost. There are no more fresh pershing rolls or long johns. Just the crap that you buy at the supermarket or at bakeries that sell you day-old stuff. In Bangkok, well, need I comment? There is ONE bakery at Emporium that has really great breads and there is even a sign on the wall that tells you at what time the fresh bread comes out of the oven. It is a rare, rare exception. It has a Japanese sounding name...and it's on the same floor as the food court (near Dairy Queen)...5th...6th floor?

Real bakeries seem to be a thing of the past. Maybe they still exist in some places but they are being replaced by fast-food baked goods. I hope people can remember what REAL baked goods are and taste like. Only then is there a chance that real bakeries will make a welcome comeback!
