Hence our nerves will tell us that natural taste doesnt taste at all.. As well with the chili peppers, (capsasin). Also, too much hoi and everything ends up smelling like fish. You can't avoid eating MSG anywhere. The primary ingredient in MSG is glutamate or glutamic acid one of the essential amino acids that make up dietary protein. It's produced naturally by the body and most humans in developed countries consume about 10 grams of it naturally from food daily - oysters, tomatoes, broccoli and mushrooms are all high in free glutamate as opposed to bound glutamate - (glutamate that's bound to other amino acids that form a protein molecule) and heaps of packet and processed foods contain it but might be labelled as 'yeast extract' or 'hydrolysed vegetable protein'. The debate on it's health risks/benefits and usefulness rages on but I think there is more risk to health from eating too much refined carbs (sugars) white rice, bread etc, fat, salt and, well, smoking and drinking!
